Sometimes we run out of ideas in the kitchen. Here’s a little idea that may get you thru one of those clueless nights when you can’t think of what to prepare next. I’d like to share one of my favorite meals with you. It’s really tasty and doesn’t take much time. Bon appetite!

Chicken Parmesan

Ingredients:
Chicken breast (sliced thinly, horizontal)
Parmesan cheese
Dijon mustard
eggs
salt /pepper

Slice chicken thinly and clean (I clean my meat with vinegar or lemon). Then, season with salt and pepper to taste. Scramble 2-3 eggs in a big flat bowl and add 3 tablespoons of Dijon mustard. In a separate flat wide bowl pour the Parmesan cheese in. Dip the chicken one piece at a time in the egg/Dijon mixture then coat with the Parmesan cheese. In a medium size grill pan add oil. Add the chicken to hot oil and don’t flip for about three minutes( when you flip too quickly the chicken doesn’t stay coated with the cheese). Flip and continue to repeat steps with the rest of the chicken….

Smothered potatoes:

Ingredients:
Four Potatoes
One white onion
Seasoning salt
garlic salt,
pepper to taste

Slice the onions finely. Peel and cut potatoes in different sizes (not cubes). Saute the onions in oil (make sure the oil coats the bottom of the pan) first until golden brown. Add potatoes and season. Cover and let brown and steam…

Steam Broccoli and season and there you have it a great hearty meal…:)
I haave to force my baby to eat her veggies and she does not want it near the food she loves…

Tip of the day: It’s not what you say, it’s what you do.  In other words don’t talk about it, be about it.

  2. hmph, I'm in my late 30's and I still do not like my food to TOUCH –everything in its own place. My husband thinks its weird that I use alot of different plates.

    that, is some good eating and it doesn't take long to make 🙂

  4. I love Chicken Parm! I make mine similar to this except without the spicy mustard. i bet it gives it a little extra zing! I LOOOOVE mustard so i'm definitely going to try this next time with it!
