crab cakeCrab cake benedict is one of my favorite meals. I recreated my version of the recipe from the Bellagio Hotel in Las Vegas. I tried to make the hollandaise sauce from scratch, but I still need to perfect it. Hollandaise recipe here.

I made it the way I prefer but you’re free to change it around.

So here’s what I did. I used flat bread, then I made an egg over medium instead of a poached egg. I layered it with the flat bread, spinach, crab cake, egg and topped it with hollandaise sauce and sprinkled a little cayenne pepper on top. It was that easy!
